Cascahu*n Plata 48 is a high proof, unaged tequila from El Arenal, Jalisco, produced by the Rosales family at the historic Cascahu*n distillery, NOM 1123. The family has been producing tequila since 1904, with a strong emphasis on traditional production and the character of agave grown in Jalisco's Valles region.
Made from 100% Blue Weber agave, Plata 48 is deliberately bottled at a muscular 48% ABV. More importantly, it is bottled without dilution or filtration, allowing considerably more of the cooked agave, mineral and herbal character of the distillate to reach the glass. Production is genuinely small-scale too, with Cascahu*n stating that individual batches do not exceed 2,500 litres.
The agaves are slowly cooked in traditional masonry ovens before being crushed by mill. Fermentation varies between cement and stainless-steel vessels and incorporates agave fibre, with natural ambient yeasts driving fermentation. The spirit is then twice distilled, first through stainless steel with a copper coil and finally through copper.
No additives are used. The higher bottling strength gives Plata 48 considerable intensity without simply making it "hot". Cooked agave remains firmly at the centre, surrounded by fresh herbs, pepper, citrus, honey, nuts, coffee and the distinctive dry mineral character associated with Cascahu*n's home in El Arenal.
For tequila drinkers accustomed to heavily sweetened or oak-driven expressions, this is tequila in a very different form: transparent, powerful and unapologetically agave forward. Tasting Notes Colour: Crystal clear. Nose: Intense cooked agave accompanied by black pepper and fresh herbs. With time, more complex notes of cardamom, nuts, coffee, honey and butter emerge, backed by dry earth and minerality.
Palate: Full-bodied and oily with concentrated cooked agave, mint and fresh herbs. Sweet honey and natural fruit balance pepper, citrus and a pleasantly bitter herbal edge, while the 48% bottling strength gives the spirit excellent weight and definition. Finish: Long and warming, with lingering cooked agave, herbs, pepper, honey and mineral notes.

It has its own production approach and is presented essentially as an undiluted, unfiltered expression designed to preserve the intensity of the distillate. At 48%, the extra strength gives you more texture, more agave and considerably more aromatic intensity. If someone wants to understand what enthusiasts mean when they talk about agave-forward tequila, Cascahu*n Plata 48 is a very good bottle to put in front of them.
