Cascahu*n Extra A*ejo is a traditionally produced, long aged tequila fromEl Arenal, Jalisco, made by the Rosales family at the historic Tequila Cascahu*n distillery (NOM 1123). The family has been producing tequila since 1904 and has become particularly respected among enthusiasts for keeping cooked agave and traditional production at the centre of its spirits.
Made from 100% Blue Weber agave, the pi*as are cooked in traditional masonry ovens before extraction and fermentation. The tequila is then double distilled before undergoing extended maturation in oak, qualifying it as an Extra A*ejo,a category that requires tequila to spend at least three years in oak vessels no larger than 600 litres.
What makes Cascahu*n's approach particularly appealing is that the oak doesn't need to turn tequila into something resembling sweetened whisky. Beneath the mature notes of vanilla, caramel, dried fruit and toasted wood, there's still plenty of cooked agave, pepper and earthy character reminding you exactly what you're drinking.
At 43% ABV, it carries enough strength to retain texture and agave character despite its lengthy maturation. This is a richer, more contemplative side of Cascahu*n and a natural choice for sipping neat. Tasting Notes Colour: Deep golden amber. Nose: Cooked agave layered with vanilla, caramel and toasted oak, developing into dried fruit, roasted nuts, cinnamon and warm baking spice.
Palate: Rich and rounded with sweet cooked agave, caramel and vanilla at the core. Dried fruit, toasted nuts and oak spice follow, alongside pepper, cinnamon and a subtle earthy character that keeps the sweetness in check. Finish: Long and warming, with lingering roasted agave, vanilla, dried fruit, pepper and seasoned oak.
