This is a Gripline Series Paring Knife 9.5CM. It is made of forged 3Cr14 high carbon stainless steel blades and is hardened to 52 degree Rockwell. The knife has a protective bolster to provide balance and help protect fingers from slipping onto the blade while cutting. The ergonomic, easy grip handles provide a comfortable non-slip grip, even when wet.
