The wine is a Cap Classique, which is a wine made with 75% Chardonnay and 25% Pinot noir. The wine was fermented and aged in a specific way, and then blended with other wines. The wine was aged for a total of 84 months, and then was degassed and lees removed.

Our signature Cap Classique undergoes a careful and specific fermentation process. Thereafter, the wine was blended in a proportion of 75 percent Chardonnay and 25 percent Pinot noir, stabilised and bottled. Secondary fermentation took place in the cool, controlled climate of the maturation cellar. The wine was matured for a further 84 months on the lees and the sediment removed by the traditional method of remuage and degorgement.
