Coconut sugar is a natural, unrefined sugar made from the sap of coconuts. It has a high mineral content, including potassium, magnesium, zinc, and iron. It also contains Vitamin B1, B2, B3, and B6. Compared to brown sugar, Coconut Sugar has twice the iron, four times the magnesium, and over 10 times the amount of zinc. Coconut sugar is produced by boiling the nectar of coconuts. Once crystallized, it is granulated. Coconut sugar is sweeter than other types of sugar and has a unique, slightly bitter taste.

Coconut blossom sugar has calories like any carbohydrate, but due to its relatively low glycemic index (reportedly around 35), it is absorbed into the bloodstream at a much slower rate than refined sugar.
How is Coconut Sugar produced?
Farmers climb the coconut palms and collect the sugar blossom nectar by gently slicing the flower. Once harvested the nectar is transferred into kettles and boiled. The kettle-boiling process lowers the moisture content of the nectar, which enables solidification. Once cooled, the crystallized brick is then granulated.
