The wine is a Cap Classique from the Borealis Vintage Cuv E Brut line. It is a pale gold color with a light oyster shell and sea-breeze aroma. On the entry, there is bright green orchard apples, white blossoms, lemon flesh, and a treacle hit of salted caramel. The wine presents deft and athletic on the palate with a creamy, fine-textured mousse. The wine has a yellow apple, kumquat, and naartjie flavor with a touch of lemon meringue and an iodine core. The taut and true to the growing conditions, the acidity is firm and cleansing, revealing white ginger root on the finish.
