This yeast is selected from the champagne region and is able to thrive in difficult fermentation conditions. It does not require grape-based nutrients, making it suitable for various types of cider, hedgerow, and country wines. It has a broad temperature range of 10-30C and can work at a low pH of 2.9. It also has low nitrogen requirements and can efficiently assimilate fructose. The yeast has a yield of 16.3 g/L for 1% alcohol by volume and a recommended maximum SO2 level of 70mg/L. It is also recommended to have a minimum turbidity level of 50 NTU.
