This coffee is from Tanzania and is a rare peaberry. Peaberry coffees are very rare, occurring in only 5% or less of crops when only one bean inside the cherry develops, creating a concentrated flavor in the bean. This coffee was grown in Tanzania's fertile volcanic soil that is lightly acidic, rich in nitrogen, potassium, and magnesium. It is processed using the wet-process, it is sundried, then carefully graded and sorted at Tembo's facility in Mbeya. This Co-Op consists of roughly 10,000 smallholder farmers that own, on average 500 trees each. Many practice subsistence farming methods and all their coffee is handpicked. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
