Fresh Winter Black Truffles (Tuber melanosporum vitt) have a black or chocolate colored flesh, and carry an aroma that is out of this world! These gastronomic treats flourish from January through April and that is when the black winter truffles have their most intense aroma. Winter Black Truffles can be stirred into a risotto or scrambled eggs, but should be added at the end of the cooking time, as a finishing touch. When shaved paper thin, black truffles makes dime-size rounds of an attractive dark-tan color, accented with a pretty, lacy network of white veins.
