Our quest for the most elegant and flavourful Sauvignon Blanc brought us to the hills of Darling, off the Cape West Coast. This unspoiled growing region enjoys the cool Atlantic breeze just a few kilometres away as the vines look to the ocean for slow ripening, producing a wonderfully aromatic and fresh style of Sauvignon Blanc.
IN THE VINEYARD:
Our Sauvignon Blanc is grown on the cool,rolling hills outside Darling, on the Cape west coast. These trellised vineyardsoverlook the cold Atlantic Ocean,which areplantedon some of the country’s finestred oakleaf soil. The deep, iron rich granite offerssufficient natural water to the deep-rooted vines withoutartificial irrigation. The result is a Sauvignon Blanc with exceptional depthofflavour and character.

WINEMAKING:
With harvest occurring beforesunrise, thegrapes arrived atthe cellar cool. Bunches were destalked and crushed under reductive conditionsinto the static drainers and then press. The skins were pressed at 0.9 bar of pressure and the juice was cold settled for 48hours, priorto fermentation. The clear juice was fermented at cool temperatures for two weeksin order to preserve the natural fruit flavours. No malolactic fermentation was allowed and the wine was left on its lees for two months before bottling
