Being a timeless and delicious meal option, a spatchcock chicken is an amazing addition to any braai-master&#8217;s arsenal; and here&#8217;s how to whip one up!<\/span><\/p>\n<hr \/>\n<p><span style=\"color: #333333;\"><strong>INGREDIENTS<\/strong><\/span><\/p>\n<p><span style=\"color: #333333;\"><strong>2-3<\/strong> whole free range chickens<\/span><br \/>\n<span style=\"color: #333333;\"> Sea salt<\/span><br \/>\n<span style=\"color: #333333;\"> Freshly ground black pepper<\/span><br \/>\n<span style=\"color: #333333;\"> Olive oil<\/span><br \/>\n<span style=\"color: #333333;\"> <strong>1<\/strong> lemon, quartered<\/span><\/p>\n<p><span style=\"color: #333333;\"><em><strong>For the Rice:<\/strong><\/em><\/span><\/p>\n<p><span style=\"color: #333333;\"><strong>1.5 cups<\/strong> of rice<\/span><br \/>\n<span style=\"color: #333333;\"> <strong>3 cups<\/strong> of chicken stock<\/span><\/p>\n<p><span style=\"color: #333333;\"><em><strong>Lemon butter:<\/strong><\/em><\/span><\/p>\n<p><span style=\"color: #333333;\"><strong>150g<\/strong> unsalted butter<\/span><br \/>\n<span style=\"color: #333333;\"> <strong>5-6<\/strong> garlic cloves, crushed<\/span><br \/>\n<span style=\"color: #333333;\"> <strong>1<\/strong> lemon, juiced<\/span><br \/>\n<span style=\"color: #333333;\"> Olive oil<\/span><br \/>\n<span style=\"color: #333333;\"> Sea salt<\/span><br \/>\n<span style=\"color: #333333;\"> Handful of fresh Italian parsley, chopped<\/span><\/p>\n<hr \/>\n<p><span style=\"color: #333333;\"><strong>EQUIPMENT<\/strong><\/span><\/p>\n<p><span style=\"color: #333333;\">1 medium-sized pot with a sealable lid<\/span><br \/>\n<span style=\"color: #333333;\"> Braai\/barbeque<\/span><br \/>\n<span style=\"color: #333333;\"> 1 small pot<\/span><\/p>\n<hr \/>\n<p><span style=\"color: #333333;\"><strong>METHOD<\/strong><\/span><br \/>\n<span style=\"color: #333333;\"> Serves 6 people<\/span><br \/>\n<span style=\"color: #333333;\"> Preparation: 10 minutes<\/span><br \/>\n<span style=\"color: #333333;\"> Cooking time: 60 minutes<\/span><\/p>\n<hr \/>\n<p><span style=\"color: #333333;\">So instead of telling you how to spatchcock a chicken, watch this short video and you\u2019ll know how to. Once you have cut the spine out turn the chicken over and push down.<\/span><\/p>\n<p><span style=\"color: #333333;\">\u00a0<iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/roC4-_Kwl8o?rel=0\" width=\"700\" height=\"394\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\" data-mce-fragment=\"1\"><\/iframe><\/span><\/p>\n<p><span style=\"color: #333333;\">Turn on the braai\/ barbeque.<\/span><\/p>\n<p><span style=\"color: #333333;\">After you have spatchcocked the chicken, place it on a plastic board and pour a generous amount of olive oil on both sides. Then, generously rub salt and pepper over the whole chicken, be careful not to put too much salt on the skin side or else it will burn.<\/span><\/p>\n<p><span style=\"color: #333333;\">When the braai has reached <strong>180C,<\/strong> place the chicken skin side up and cook for <strong>40 minutes<\/strong> without turning, close the lid.<\/span><\/p>\n<p><span style=\"color: #333333;\">Place the rinsed rice in a pot with the stock, put the lid on. Once the water starts boiling, turn down the heat and simmer with the lid closed for 15 minutes \u2013 DO NOT LIFT THE LID. Once it has simmered for 15 minutes turn off the heat and steam for a further <strong>15 minutes.<\/strong><\/span><\/p>\n<p><span style=\"color: #333333;\">Turn the chicken and cook for a further <strong>15-20 minutes<\/strong> or until the juice by the thigh runs clear, if the heat is to high, turn it down- you don\u2019t want the skin to burn.<\/span><\/p>\n<p><span style=\"color: #333333;\">While the chicken is cooking, place the small pot on high heat, add the butter and 2 tablespoons of olive oil. When the butter has melted add the crushed garlic and turn down the heat. Cut the lemon in half and place it in a bowl and heat in the microwave for <strong>1 minute,<\/strong> this ensures that you get all of the juice.<\/span><\/p>\n<p><span style=\"color: #333333;\">Once the chicken has come off the heat, fluff up the rice, place the lemon juice and chopped parsley into the melted butter and take off the heat.<\/span><\/p>\n<p><span style=\"color: #333333;\">Carve the chicken into quarters and squeeze lemon juice over the meat.
